Great Easy Yeast Rolls

These rolls will be raved about by anyone you serve them to. Just remember to annoint them well with butter and coarse salt before baking!

1 baking potato peeled and cut into 1in. pieces
1/2 in unsalted butter, divided in two
1/2 cup milk
1 teaspoon salt
2 tablespoons sugar
1 package active dry yeast
2 2/3 cups flour

_Boil potatoe till soft, reserve 1 cup water.
_Melt 2 1/2 tablespoons butter.
_Mash potato with fork and stir in milk, salt, 2 tablespoons sugar and the melted butter.
_ Put yeast into reserved cup of potato water and let stand till foamy.
_Stir yeast mixture into potato mixture and stir in flour with a wooden spoon until a soft dough forms.
_Turn dough onto floured surface and knead till dough is smooth and elastic.. about 10 minutes...keeping hands lightly floured so dough does't stick. (Alternatively.. use dough hook on electric mixer and beat till smooth and elastic).
_Lightly grease large bowl and put dough in.. turning once.
_Cover with saran wrap and let rise in refrigerator overnight or from 8 - 12 hours
_Butter 9 by 13 cake pan.
_Punch down dough and form into two 12 in rolls on lighly floured surface.
_Form 12 balls from each roll and place in greased pan in 6 rows of 4 balls each.
_Cover pan with cotton towel..not terry cloth and let rolls rise till double.. about 1 hour.
_Preheat oven to 375 degrees with rack in the middle.
_Brush tops of rolls with remaining butter, melted.
_Sprinkle with coarse salt.
_Bake until golden brown... 25 - 30 minutes. Keep a close watch here as oven temps vary.. do not overbake.
_Loosen edges with knife and turn onto rack.
